Ingredients

  • 1 Tbsp Extra-Virgin Olive Oil
  • 4 cups Cauliflower Florets finely chopped, 1 medium
  • 1/2 tsp Salt
  • 3/4 cup Low Salt Chicken Broth or vegetable broth
  • 1 tsp Orange Zest freshly grated
  • 1/4 cup Orange Juice
  • 1/4 cup Currants
  • 2/3 cup Couscous prefer whole wheat
  • 1/2 cup Scallions, Spring Or Green Onions green parts, sliced

Directions

  1. Heat oil in a large saucepan over medium heat.
  2. Add cauliflower and salt; cook, stirring, until softened, about 4 minutes.
  3. Add chicken broth, orange zest, juice and currants; bring to a boil over high heat.
  4. Stir in whole wheat couscous and scallion greens.
  5. Remove from heat and let stand, covered, until the liquid is absorbed, about 5 minutes.
  6. Fluff with a fork and serve.
