Ingredients

  • 1 cup Feta Cheese cubed
  • 1/2 cup Cucumbers sliced
  • 1/2 cup Sweet Red Bell Peppers sliced
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Kalamata Olives pitted, halved
  • 1/2 cup Onions thinly sliced
  • 1/4 cup Olive Oil
  • 2 Tbsp Vinegar
  • 1 Salt And Black Pepper to taste
  • 1 Oregano to taste
  • 2 tablespoons Lemon Juice
  • 1 cup Pasta cooked, drained, cooled, optional

Directions

  1. Drain the cheese, cube it and place it in a large salad bowl.
  2. Add the cucumbers, red peppers, olives, tomatoes, onion and pasta and mix well.
  3. Whisk the olive oil, vinegar, oregano, salt and pepper and lemon juice in a bowl and then pour over the salad and toss.
