Ingredients

  • 11 Egg Whites
  • 1 1/2 cups Sugar
  • 1 cup All-Purpose Flour
  • 1 tsp Cream Of Tartar
  • 1/8 tsp Salt
  • 1 tsp Vanilla Extract
  • 2 cups Raspberries fresh or frozen (thawed)
  • 2 tablespoons Sugar

Directions

  1. Mix the raspberries and two (or more to taste) tablespoons sugar in a bowl and allow to macerate in the refrigerator. The sugar will help draw some juice out of the raspberries.
  2. Sift the dry ingredients together 4 times.
  3. Beat the egg whites until dry and stiff peaks are formed.
  4. Fold dry ingredients into eggs, two tablespoons at a time. Fold gently to maintain as much volume in the batter as possible.
  5. Add flavoring and bake at 350° f (180° c) f for 40 to 45 minutes.
  6. This cake should be baked in an ungreased angel food pan.
  7. Once baking is complete turn the pan over onto a funnel and allow to cool completely.
  8. Serve slices topped with the raspberries prepared earlier.
  9. Truly food for the angels.
