Ingredients

  • 2 Italian Plum (Roma) Tomatoes chopped
  • 1 Avocados ripe, peeled, pitted and chopped
  • 4 tablespoons Red Onion finely chopped
  • 1 clove Garlic minced, or to taste
  • 1 Tbsp Parsley Leaves freshly snipped
  • 1 Tbsp Oregano freshly chopped
  • 1 Tbsp Olive Oil
  • 1 Tbsp White Wine Vinegar red or white
  • 3 oz Feta Cheese crumbled or cubed

Directions

  1. In a medium or large bowl, add tomatoes, avocados, onion, and garlic, gently toss to combine well.
  2. Stir in parsley and oregano.
  3. Drizzle olive oil and vinegar.
  4. Add feta, and gently stir until evenly coat.
  5. Cover, and chill for at least 2 hours, or up to 5 hours.
  6. Serve.
