Ingredients

  • 3 Flour Tortillas soft, prefer whole wheat
  • 2 tablespoons Olive Oil
  • 3 Italian Plum (Roma) Tomatoes finely diced
  • 1 Tbsp Capers drained
  • 1 medium Onions chopped
  • 1 tsp Black Pepper to taste
  • 1/2 cup Jarlsberg Cheese grated, or Swiss
  • 1 Salt to taste

Directions

  1. Preheat oven to 400° f (200° c).
  2. Cut the tortillas into four triangles.
  3. Brush with olive oil on both sides.
  4. Place them out on a cookie sheet.
  5. Spread some of the chopped onion, tomatoes and olives on each piece.
  6. Add a pinch of capers, season with pepper and cover with cheese.
  7. Sprinkle salt to taste.
  8. Bake in the oven at 400° f (200° c) for 5 minutes. Do not burn.
  9. Serve hot.
