Ingredients

  • 2 Onions minced
  • 2 cloves Garlic peeled and minced
  • 1 tsp Olive Oil
  • 4 cups Italian Plum (Roma) Tomatoes chopped
  • 1 cup Sweet Red Bell Peppers sweet , diced
  • 1/4 cup Celery diced
  • 2 tablespoons Green Chili Peppers chopped
  • 2 cups Stock
  • 2 tsp Dill Weed fresh , chopped
  • 2 tablespoons Cilantro fresh, chopped
  • 1/2 tsp Cayenne Pepper
  • 1/4 tsp Cumin

Directions

  1. Combine all ingredients except dill, cilantro, cumin, cayenne and salt.
  2. Bring to a boil and simmer for 25 minutes.
  3. Let cool slightly, then puree.
  4. Stir in remaining ingredients with some salt and pepper.
  5. Serve warmed or chilled.
