Ingredients
Chocolate Part
- 1/2 cup Walnuts toasted and chopped
- 1/4 cup Prunes
- 2 tablespoons Peanut Butter creamy and natural
- 2 tablespoons Cocoa Powder
- 1/2 tsp Vanilla Extract
- 1/4 cup Chocolate Chips (Semi-Sweet)
Peanut Butter Part
- 1/2 cup Peanut Butter creamy and natural
- 1/4 cup Chickpeas (Garbanzo Beans) drained and finely ground in a food processor
- 1/2 tsp Vanilla Extract
Directions
- In a medium bowl, add the walnuts, prunes, peanut butter, cocoa powder, vanilla extract and chocolate chips.
- Mix until well combined. Set aside.
- In another bowl, stir together the peanut butter, chickpea paste, and vanilla extract until mix well.
- To form a ball, you need to put together about 1/2 tablespoon white batter, 1/2 tablespoon dark batter, and another 1/2 tablespoon white batter, which makes the chocolate part in the centre.
- Repeat until all the batters are used up.
- Note: The size of the ball can be varied by your preference. The energy balls can be kept in an air-tight container in the refrigerator for up to at least 1 week.
