Pasta with Beet Greens and Raisins (#2124)

Ingredients

  • 8 oz Penne Pasta uncooked, mini penne
  • 1/4 cup Seedless Raisins
  • 1 1/2 tsp Olive Oil
  • 2 cups Beet Greens coarsely chopped trimmed
  • 2 tsp Garlic bottled minced
  • 1/3 cup Almonds slivered or sliced, toasted
  • 1/2 tsp Salt
  • 1/8 tsp Black Pepper
  • 1 Black Pepper Cracked, optional
  • 1 Parmesan Cheese or shaved, as needed

Directions

  1. Cook the pasta according to package directions, omitting salt and fat.
  2. Drain.
  3. While pasta cooks, place raisins in a small bowl; cover with hot water.
  4. Let stand 10 minutes.
  5. Drain.
  6. While pasta cooks and raisins soak, heat oil in a large nonstick skillet over medium-high heat.
  7. Add greens and garlic; sauté 3 minutes or until greens are tender.
  8. Stir in pasta, raisins, almonds, salt, and 1/8 teaspoon black pepper; toss to combine.
  9. Sprinkle with cracked black pepper and parmesan, if desired.
