Ingredients

  • 1 Corned Beef 1 package
  • 4 cups Cabbage shredded
  • 1 cup Onions chopped
  • 3 cups Mashed Potatoes

Directions

  1. Prepare corned beef according to package directions.
  2. Toward the end of the roasting, cook the cabbage and onion in a small amount of boiling salted water for 15 minutes.
  3. Drain.
  4. Stir into mashed potatoes.
  5. Garnish with chopped parsley, if desired.
