Ingredients

  • 4 medium Tomatoes diced
  • 1 medium Red Onion finely chopped
  • 1 Tbsp Cilantro freshly chopped
  • 1 Lemon juice, freshly squeezed
  • 1 Tbsp Extra-Virgin Olive Oil
  • 1 Salt to taste
  • 1 Black Pepper freshly ground to taste, optional

Directions

  1. Combine tomato, red onion and cilantro leaves in a medium bowl.
  2. Stir in lemon juice, olive oil and cilantro leaves.
  3. Season with salt and pepper if desired.
