- 4 medium Tomatoes diced
- 1 medium Red Onion finely chopped
- 1 Tbsp Cilantro freshly chopped
- 1 Lemon juice, freshly squeezed
- 1 Tbsp Extra-Virgin Olive Oil
- 1 Salt to taste
- 1 Black Pepper freshly ground to taste, optional
- Combine tomato, red onion and cilantro leaves in a medium bowl.
- Stir in lemon juice, olive oil and cilantro leaves.
- Season with salt and pepper if desired.
