Ingredients

  • 1 cup Orange Juice
  • 1 cup Water
  • 2 oz Dried Apricots
  • 1 pinch Cloves
  • 1 pinch Cinnamon
  • 1/4 tsp Salt optional
  • 4 oz Pearl Barley
  • 1/2 oz Butter or margarine
  • 1 oz Nuts chopped, optional

Directions

  1. Add the water and orange juice into a saucepan.
  2. Cut the apricots into small pieces and add to the saucepan along with a pinch of ground cloves, cinnamon and salt.
  3. Bring to the boil over medium heat and add the barley.
  4. Cover, reduce heat and simmer for about 1 hour until the barley is tender and cooked to your liking.
  5. Check and stir occasionally adding more orange juice as needed.
  6. The liquid will be completely absorbed.
  7. Stir in margarine (or butter) and the mixed nuts.
  8. Serve hot as is or add a splash of soy milk as desired.
