Ingredients

  • 8 oz Cream Cheese softened
  • 1/4 cup Mayonnaise or salad dressing
  • 2 tablespoons Lemon Juice
  • 1/2 tsp Salt
  • 1/4 tsp Ginger ground
  • 1/8 tsp Black Pepper
  • 4 dash Red Hot Pepper Sauce
  • 2 cups Chicken cooked, finely cut up
  • 2 large Eggs hard-cooked, chopped
  • 1/4 cup Scallions, Spring Or Green Onions sliced

Toppings

  • 3 Green Bell Peppers rings
  • 1 Tbsp Sesame Seeds toasted
  • 3 tablespoons Scallions, Spring Or Green Onions chopped, or green pepper
  • 3 tablespoons Olives chopped, ripe, pitted
  • 3 tablespoons Pimentos drained, chopped

Directions

  1. Mix cheese, mayonnaise, lemon juice, salt, ginger, pepper, and pepper sauce.
  2. Stir in chicken, eggs, and 1/4 cup onions.
  3. Shape into log, 8x2 inches.
  4. Wrap in plastic wrap; refrigerate until firm, about 4 hours.
  5. Cut each green pepper ring once to make a curled strip.
  6. Place strips diagonally across log, dividing log into fourths.
  7. Sprinkle each section with one of the four remaining toppings.
  8. Serve with crackers.
