Ingredients

  • 2 cups All-Purpose Flour
  • 1/2 tsp Salt
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 1/2 tsp Cinnamon ground
  • 1/2 tsp Nutmeg
  • 4 Egg Whites
  • 1 whole Eggs
  • 16 oz Pumpkin
  • 1 1/2 cups Sugar
  • 2/3 cup Applesauce unsweetened
  • 1/3 cup Vegetable Oil
  • 1 tsp Vanilla Extract

Directions

  1. Preheat oven to 350° f (180° c).
  2. In a large bowl, sift together flour, salt, baking powder, baking soda, cinnamon, and nutmeg.
  3. In another large bowl, beat together eggs, pumpkin, sugar, applesauce, oil, and vanilla extract.
  4. Gradually add the flour mixture to the pumpkin mixture; beat well.
  5. Pour batter into a 9 x 13-inch baking dish that has been coated with nonstick vegetable spray.
  6. Bake for 30 minutes or until toothpick inserted in center comes out clean.
  7. Cool completely in pan before serving.
