Ingredients

  • 1 small Onions finely chopped
  • 6 tablespoons Vegetable Oil
  • 1 large Tomatoes sliced
  • 1/2 tsp Salt
  • 1/2 tsp Curry Powder
  • 1 medium Cabbage shredded
  • 2 Carrots sliced into rounds
  • 1 Green Bell Peppers chopped

Directions

  1. Over moderate heat, fry the onion in oil until lightly browned, stirring to prevent scorching.
  2. Add tomatoes, salt and curry powder and continue to stir-fry for 3 minutes.
  3. Add cabbage, carrots and pepper and mix well.
  4. Pour in about 1/2 cup water.
  5. Cover the pot, reduce heat and simmer until the liquid is absorbed and the cabbage is still slightly crunchy.
