Ingredients

  • 1 1/2 pounds Ground Beef
  • 2/3 cup Crackers crumbled
  • 1/3 cup Onions minced
  • 1 Eggs
  • 1 1/2 tsp Salt
  • 1/4 tsp Ginger
  • 1 Tbsp Vegetable Shortening
  • 2 tablespoons Cornstarch
  • 1/2 cup Brown Sugar packed
  • 13 1/2 oz Pineapple Chunks in light syrup, finely chopped
  • 1/3 cup Vinegar
  • 1 Tbsp Tamari Soy Sauce
  • 1/3 cup Green Bell Peppers

Directions

  1. Mix meat, crumbs, onion, egg, salt, ginger and milk.
  2. Shape mixture into balls by rounded tablespoonful.
  3. Melt shortening in large skillet; brown and cook meat balls.
  4. Remove meat balls and keep warm.
  5. Pour fat from skillet.
  6. Mix cornstarch and sugar.
  7. Stir in reserved pineapple juice or syrup, vinegar and soy sauce until smooth.
  8. Pour into skillet and cook over medium heat, stirring constantly, until mixture thickens and boils.
  9. Boil and stir 1 minute.
  10. Add meat balls, pineapple tidbits and green pepper.
  11. Heat thoroughly.
