Ingredients

  • 2 large Eggs
  • 1 cup Applesauce
  • 2 tsp Vanilla Extract
  • 1 cup Sugar
  • 3 tablespoons Maple Syrup (pure)
  • 2 cups Zucchini grated
  • 1 small Bananas soft, mashed
  • 1 cup All-Purpose Flour
  • 2 cups Whole Wheat Flour
  • 1 tsp Baking Powder
  • 3/4 tsp Baking Soda
  • 1 tsp Cinnamon
  • 3/4 tsp Salt
  • 1/2 tsp Nutmeg
  • 1/2 cup Nuts chopped
  • 3 tablespoons Light Sour Cream optional but lends more moist taste

Directions

  1. Beat eggs.
  2. Add the applesauce, vanilla, sugar, maple syrup, zucchini and banana.
  3. Mix together well and add remaining ingredients.
  4. Pour into 2 greased and floured loaf pans (approx. 3 x 9 x 3 inches deep).
  5. Preheat oven to 350° f (180° c) f and bake for 45 minutes to 1 hour, or until toothpick inserted in center comes out clean.
  6. Makes two loaves.
