Ingredients
- 2 large Eggs
- 1 cup Applesauce
- 2 tsp Vanilla Extract
- 1 cup Sugar
- 3 tablespoons Maple Syrup (pure)
- 2 cups Zucchini grated
- 1 small Bananas soft, mashed
- 1 cup All-Purpose Flour
- 2 cups Whole Wheat Flour
- 1 tsp Baking Powder
- 3/4 tsp Baking Soda
- 1 tsp Cinnamon
- 3/4 tsp Salt
- 1/2 tsp Nutmeg
- 1/2 cup Nuts chopped
- 3 tablespoons Light Sour Cream optional but lends more moist taste
Directions
- Beat eggs.
- Add the applesauce, vanilla, sugar, maple syrup, zucchini and banana.
- Mix together well and add remaining ingredients.
- Pour into 2 greased and floured loaf pans (approx. 3 x 9 x 3 inches deep).
- Preheat oven to 350° f (180° c) f and bake for 45 minutes to 1 hour, or until toothpick inserted in center comes out clean.
- Makes two loaves.
