Ingredients

  • 2 Russet Potatoes
  • 4 tablespoons Sour Cream
  • 1 Chives freshly finely chopped, or scallions, as needed

Directions

  1. Preheat oven to 350° f (180° c) degree.
  2. Wrap the potatoes into foil paper, baking until tender, 25 to 30 minutes.
  3. Cool until you can handle.
  4. Split the potatoes with a knife, and top with 2 tablespoons of sour cream each potato, sprinkle some chives.
  5. Serve warm.
