Ingredients

Dressing

  • 1/2 cup Vegetable Oil
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Red Wine Vinegar
  • 1 tsp Oregano
  • 1/2 tsp Dry Mustard
  • 1/2 tsp Basil
  • 1/4 tsp Paprika
  • 1/4 tsp Thyme
  • 1 clove Garlic crushed
  • 1 Black Pepper dash

Salad

  • 2 1/2 cups Pasta Shells or spirals, uncooked
  • 1 cup Broccoli Florets cooked tender-crisp
  • 1/2 medium Red Onion thinly sliced
  • 2/3 cup Pepperoni sliced, optional
  • 2 medium Tomatoes
  • 4 large Eggs hard-cooked, wedged

Directions

  1. Combine all dressing ingredients.
  2. Refrigerate for at least 1 hour.
  3. Cook pasta, following package directions.
  4. Rinse cooked pasta in cold water to prevent sticking.
  5. Add broccoli, red onions and pepperoni. Chill.
  6. Just before serving, slice tomatoes into eights and add to salad.
  7. Mix in dressing and toss well.
  8. Garnish with egg wedges. Serve immediately.
