Ingredients

Pudding

  • 1 cup All-Purpose Flour
  • 1 large Eggs beaten
  • 1 cup Sugar
  • 1/2 cups Cherry Juice
  • 1/2 tsp Salt
  • 1 Tbsp Butter melted
  • 15 oz Cherries tart, 1 can, drain and reserve juice
  • 1 cup Walnuts chopped
  • 1 tsp Baking Soda mixed with 1 teaspoon water

Sauce:

  • 1 cup Brown Sugar
  • 1 tsp Vanilla Extract
  • 1 tsp All-Purpose Flour
  • 1 tsp Butter
  • 1 Cherry Juice remaining cherry juice with enough water to measure 1 cup, cook until thick, 5 or 6 minutes.

Directions

  1. Blend together flour, sugar and salt.
  2. Beat egg, add 1/2 cup cherry juice and melted butter, add baking soda mixture, add to flour, sugar, salt mixture. Mix well.
  3. Add chopped nuts and cherries.
  4. Pour into a greased loaf pan and bake at 350° f (180° c) for 45 minutes.
  5. Remove from oven and poke holes with a fork and pour hot sauce over pudding.
  6. Cool and refrigerate.
  7. Serve with whipped cream.
