Ingredients

  • 2 slices Bread whole wheat or whole grain
  • 2 tablespoons Basil Pesto basil or any your favorite flavor
  • 1/4 Cucumbers washed, peeled if needed, slice into 1/4-inch rounds
  • 1/2 Roasted Sweet Red Bell Peppers slice into strips
  • 2 Artichoke Hearts marinated, drained and sliced
  • 1 Lettuce Leaves torn into pieces, or any your favorite greens

Directions

  1. Spread 1 tablespoon of basil pesto on each slice of bread.
  2. Top one slice with cucumber rounds, roasted bell pepper strips, artichoke hearts and lettuce.
  3. Place the other slice on top, and press to form a sandwich.
  4. Serve.
