Ingredients

  • 2 1/2 cups 1% Milk or skim
  • 1 cup Sugar
  • 1 cup Non Fat Powdered Milk
  • 3 1/2 oz Chocolate Unsweetened chopped
  • 3/4 cup Egg Whites pasteurized, liquid, or you can use egg whites powder to make
  • 1 Tbsp Vanilla Extract
  • 1/8 tsp Salt
  • 1/2 cup Chocolate Chips (Semi-Sweet)
  • 1/2 cup Walnuts chopped and toasted

Directions

  1. Add milk, sugar, dry milk powder and chocolate in a large saucepan and bring to a simmer over medium heat, whisking almost constantly, until smooth and thickened, about 25 minutes.
  2. Remove from the heat.
  3. Pour egg whites into a large bowl and whisk in the milk mixture in a slow, steady stream until smooth.
  4. Whisk in vanilla and salt.
  5. Refrigerate until cool, at least 3 hours or overnight.
  6. Freeze the ice cream mixture in an ice cream maker, according to the manufacturer's directions.
  7. Freeze until it forms into your desired firmness.
