Ingredients

  • 2 1/2 cups All-Purpose Flour
  • 1/4 cup Sugar
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 cup Butter or margarine
  • 1/2 cup Seedless Raisins optional
  • 1 cup Apple Butter
  • 1 large Eggs slightly beaten
  • 1 Nonstick Cooking Spray
  • 1 Apple Butter for accompaniment

Directions

  1. Preheat oven to 425 degrees f.
  2. In a large bowl combine flour, sugar, baking powder and baking soda.
  3. Cut in butter or margarine with pastry cutter or fork until mixture resembles coarse crumbs.
  4. Add raisins. In a separate bowl combine apple butter and egg.
  5. Add flour mixture, stirring j ust until dry ingredients are moistened.
  6. Spray 2 1/2 inch muffin tins with vegetable cooking spray.
  7. Fill almost full wi th batter. Bake at 425 degrees f for 14 to 16 minutes or until lightly browned.
  8. Cool slightly.
  9. Serve warm with additional apple butter.
