Ingredients

  • 4 medium Bananas very ripe
  • 1 cup Whole Wheat Flour
  • 1 cup Bran unprocessed
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 cup Low-Fat Yogurt
  • 2 Egg Whites
  • 1/4 cup Brown Sugar
  • 1/2 tsp Cinnamon (or more)

Directions

  1. Liquify bananas in a blender or food processor and add the yogurt and egg whites.
  2. Mix the dry ingredients, then add the liquid.
  3. Mix just until moistened.
  4. Spoon into sprayed (or non-stick) muffin tins.
  5. Bake in a preheated 400° f (200° c) oven for about 25 minutes. (use the toothpick test.)
  6. Makes 12-14.
