Ingredients

  • 1 cup Cottage Cheese
  • 1/2 cup Evaporated Milk skim
  • 1/4 cup Cream Cheese
  • 1/2 cup Onions chopped
  • 1/4 cup Sundried Tomatoes optional
  • 1/2 cup White Wine dry
  • 1 tsp Garlic chopped
  • 2 cups Button Mushrooms sliced
  • 1 cup Shiitake Mushrooms sliced
  • 1 1/2 cups Chicken Broth
  • 2 tablespoons Tamari Soy Sauce low sodium
  • 1 tsp Lemon Juice
  • 1/4 tsp Thyme dried
  • 4 Chicken Breasts
  • 1 tsp Cornstarch dissolved in
  • 1 Tbsp Basil chopped

Directions

  1. Whirl cottage cheese, evaporated milk and cream cheese in a biender until smooth.
  2. Set aside 1/2 cup. Refrigerate remainder for another use (such as to make creamy soups).
  3. Combine onions, tomatoes, wine and garlic in a large nonstick skillet.
  4. Cover; cook over medium heat 2 minutes.
  5. Stir in mushrooms, broth, soy sauce, lemon juice and thyme.
  6. Add chicken. Cover and simmer 5 minutes.
  7. Turn chicken; cook 5 minutes longer.
  8. Transfer chicken to a plate.
  9. Cover.
  10. Stir cornstarch mixture into the skillet.
  11. Add the cheese mixture.
  12. Boil 1 minute.
  13. Pour sauce over chicken breasts and sprinkle with basil.
  14. Serve at once.
