Ingredients

  • 4 Pasilla Chiles seeded
  • 4 Hot Chili Peppers seeded, diced
  • 1 medium Onions chopped
  • 2 cloves Garlic chopped
  • 2 medium Tomatoes peeled, chopped
  • 2 tablespoons Sesame Seeds
  • 1/2 cup Almonds
  • 1/4 cup Seedless Raisins
  • 1/4 tsp Cloves ground
  • 1/4 tsp Cinnamon ground
  • 1/4 tsp Coriander ground
  • 3 tablespoons Vegetable Shortening
  • 1 cup Chicken Broth

Directions

  1. Combine chiles, onion, garlic, tomatoes, sesame seeds, almonds, tortilla, raisins, cloves, cinnamon, and coriander.
  2. Purée small amounts of mixture in a blender until smooth.
  3. Melt shortening in a skillet and sauté the purée for 10 minutes, stirring frequently.
  4. Add chicken broth and chocolate and cook over very low heat for 45 minutes.
  5. The sauce should be very thick.
  6. Remaining sesame seeds are used for garnish.
  7. Sauce is excellent with poultry.
