Ingredients

  • 1 cup Onions chopped
  • 2/3 cup Celery chopped
  • 2/3 cup Sweet Red Bell Peppers chopped, or yellow
  • 2/3 cup Corn fresh (Optional)
  • 3 tablespoons Vegetable Oil
  • 2 pounds Ground Beef
  • 12 oz Tomato Paste 2 cans
  • 1/2 cup Ketchup
  • 2 tsp Worcestershire Sauce
  • 2 cups Water
  • 1 dash Red Hot Pepper Sauce
  • 2 tsp Chili Powder up to 3 tsp (or more, to taste)
  • 2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Thyme
  • 1 Cheddar Cheese
  • 1 Corn Chips Frito‚Äôs

Directions

  1. In large skillet, cook onion, celery, bell pepper and corn (if using) in oil til tender but not brown.
  2. Add beef; brown lightly.
  3. Add remaining ingredients except chips and cheese.
  4. Simmer uncovered for 1 hour, stirring occasionally.
  5. Serve over corn chips, top with grated cheese.
