Ingredients

  • 1 pint Cherry Tomatoes finely chopped
  • 1 clove Garlic small clove, finely chopped
  • 1/4 cup Basil fresh, chopped
  • 1/4 pound Mozzarella Cheese fresh, 1/4-inch thick slices
  • 2 tablespoons Lemon Juice fresh
  • 4 tablespoons Olive Oil
  • 1 Salt And Black Pepper
  • 4 slices Bread, Italian toasted, prefer whole wheat or whole grain

Directions

  1. Preheat broiler.
  2. In a large bowl combine tomatoes, garlic and basil.
  3. Stir in lemon juice and olive oil.
  4. Season with salt and pepper.
  5. Top toasted bread with the mixture and a slice of cheese and place on baking sheet.
  6. Broil until cheese melts.
  7. Serve hot.
