Ingredients

  • 1 cup All-Purpose Flour
  • 1/3 cup Whole Wheat Pastry Flour
  • 1/2 cup Buckwheat Flour
  • 2 tablespoons Sugar
  • 1 tsp Baking Soda
  • 4 tsp Baking Powder
  • 2 large Eggs slightly beaten
  • 4 tablespoons Butter melted
  • 1 1/2 cups Buttermilk
  • 1/2 cup Milk
  • 2 Bananas mashed, ripe

Directions

  1. Mix together flours, sugar, salt, baking soda and baking powder.
  2. Beat eggs in separate bowl then stir in buttermilk, milk, bananas and butter.
  3. Add liquid mixture to dry ingredients stirring until blended well, do not over mix.
  4. Heat greased griddle or skillet over medium heat.
  5. For each pancake pour scant 1/4 cup batter onto hot griddle.
  6. Cook pancakes until puffed bubbly and dry around edges.
  7. Turn and cook other sides until golden brown.
  8. Serve with maple syrup or fresh fruits if desire.
