Mashed Banana Fritters (#1080)

- 2 cups Bananas lightly mashed
- 3 tablespoons Rice Flour
- 1 Tbsp Butter
- Lightly mix flour with mashed banana. (add 1 tablespoon of white or unbleached flour if mixture is too liquid. You may add 1 teaspoon of brown sugar if you have a sweet tooth.) lightly butter a frying pan on medium heat. Drop spoonfuls of the banana batter onto the pan. Fry for about 3 minutes on each side until golden brown. Serve warm.
